The incredibly talented Karla Reyes of Swizzle Mobile Bar, Go Gourmet by The Plaza, and The Plaza Catering, has a new baby… and it’s really cheesy! Literally. This multi-talented biz wiz put up a premium cheese buffet in Metro Manila and everyone’s going gaga over the creamy, strong, stinky varieties of cheese on offer. She hosted an intimate gathering the launch of La Petite Fromagerie, and so naturally, everyone came out in droves to support the advent of unlimited French cheese in Manila.

La Petite Fromagerie is a catering service that specializes in cheeses. They set up a variation of cheese buffets depending on event requirements that range from assorted cheese buffets, Raclette buffets, cheese + Raclette combinations, cheese fondue, and even grilled cheese buffets, perfect for kiddie parties, school fairs, concerts, etc.

 

 

Karla offers a lot of fantastic packages to suit every occasion, with a variety of different cheeses to choose from, and there were a few on on display that afternoon for guests to appreciate. The Tête de Moine is Karla’s childhood favorite, a semi-hard Swiss cheese, traditionally enjoyed by carefully scraping the top off with a knife to produce thin shavings, which is said to help develop the odor and flavor by allowing oxygen to reach more of the surface.

Raclette is a classic favorite of gooey melty Swiss cheese, best served melted, covering marble potatoes, roasted cherry tomatoes with rosemary, cornichons, pickled white pearl onions, arugula, and crostinis in a thick yellow blanket of delicious cheese. There are restaurants in New York who create their menus solely around this big wheel of cheese, so La Petite Fromagerie bringing the Instagram-worthy trend to your next party.

 

 

For those looking for a mild and creamy cheese to spread on crackers, Brie Bridel is definitely the cheese for you. This is best served with dried figs, apricots, cranberries, walnuts, almonds, and drizzled with a little (ok, a lot of) truffle honey.

Aside from the main assortment of cheeses, Karla also offers specialty cheese bites like the Cacio e Pepe Fritelle, which was so damn good, I never got a picture of it once guests discovered the amazing treat. Another cheese that’s taking NYC by storm (and also happens to be inspired from a New York-based chef) cacio e pepe fritelle are deep-fried cheese fritters coated in parmesan and fresh ground pepper. The mild parmesan cheese with the spicy pepper makes for a brilliant combination – I’d swap my boring ol’ chips out for these any day! It’s so good!

Other specialty cheese bites La Petite Fromagerie offers are the Black Truffle Cheese Spread, house-made cheese spread with black truffle cream and melba toast, and Bite-sized Malakoffs, traditional Swiss dishes served with a side salad made of a deep-fried cheese batter.

 

 

Karla’s mom owns and operates The Plaza Catering, famous for practically everything they serve. To compliment the cheese buffet, guests were also treated to The Plaza’s New York-style Hot Pastrami has USDA Angus Beef, house-cured and smothered with black peppercorns, which is best served with sauerkraut and their homemade Horsey Radish cream. I personally cannot get enough of this – they really do make some of the best pastrami in Metro Manila, IMHO. A few generous slices of pastrami with cornichons and pickled white pearl onions covered in a thick layer of raclette was all I needed to make me happy that afternoon.

 

 

Another winner is The Plaza Premium Baked Ham. They use a 52-year-old family recipe, cured and lightly smoked with secret herbs and spices, baked fresh everyday and best served with The Plaza’s pan de sal and choice of four sauces: Premium Glaze, Gutsy Garlic, Sweet Mustard, and Wasabi Mayo. Of course, I had to have some of the sweet ham in between warm pan de sal slices with my favorite combination of Gutsy Garlic and Wasabi Mayo. Believe me, I’ve been enjoying this for years – I know what I’m doing.

 

 

To support Karla’s new buffet concept, Happy Living Philippines paired some of their choice wines with the cheeses on display, like their Gabbiano Chiani Classico DOCG 2012, Valdivieso Chardonnay 2014, Beringer Founders’ Estate Zinfandel 2014, Valdivieso Brut Sparkling Wine, and Robert Skalli Reserve Merlot 2013.
